We prioritize freshness and flavor above all, adding the perfect touch for each ingredient. The hairy crab is paired with a jelly made from Tosa vinegar and ume paste, enhancing its rich sweetness. In the soup with pike eel, the roasted aroma and the umami of the mullet roe dissolve into the broth, creating a refined aftertaste. On January 12, 2016, 'Sushi Mutsuka' opened its doors. The owner honed his skills at the renowned Kurume restaurant 'Jinroku' and founded this establishment together with his wife, who serves as the proprietress. We strive to discern the seasonal delicacies and pursue freshness and flavor, utilizing various cooking methods to maximize the natural taste of seafood.
